As much fun as Catalog Kick Off days are…I am always glad when they are over! Yesterday was a whirlwind……I wanted to get this posted, but there was just too much going on! At least the NEXT catalog to come isn’t til January…..Can we pray that life is back to a more normal version by then?!
So today’s tutorial is so super easy, super fun and SURE to get your creative juices flowing!
One of my favorite people (I see you Peggy!) asked if we could bake in the new mini cups. While we came to the conclusion that it is probably safe….no one could answer for certain what was in the cups (plastic?) to make certain that once you baked in them whatever you were going to eat was not going to poison you : )
But her ideas was fabulous, no? So I do what we all do these days…headed to Home Goods and shopped the very empty aisles. At my TJ Maxx they were busy stocking FOURTH OF JULY decorations. This pandemic has us all kinds of messed up…… (and if you don’t want to be giving out Halloween decorations as Christmas gifts – now is the time to start planning your Handmade gifts!)
So when all of the cupcake cuteness was out of stock at Home Goods…I turned to Amazon and ordered these fun little liners.
They were PERFECT! There are also 125 of them in a packet….so you can do a whole lot of cupcake and muffin gift giving!
The ONLY thing not in this project from Stampin Up! are the liners. They just so happen to fit in our 6×8 Cello Bags – and I tied them closed with a bit of our linen thread.
And…there you have a totally FUN gift!
The cups hold about 8oz of coffee, so this gives you an idea of how LARGE these muffins are.
And…here’s the deal. This would be adorable with Pumpkin Muffins, right? Well….it’s AUGUST people. I have an abundance of zucchini which was calling out to be made into one of our favorite breads. So for the purposes of PROPS (lol) I went with what we would want to eat after. IF THEY WERE PUMPKIN…the color scheme would be so much better….but whatever….. Sometimes I am practical. Although when I was baking them my husband asked if they were “dinner or dessert”
He was not happy to hear they were props and he was going to have to wait.
I did feature these on our Live – and you all asked for my recipe – here you go:
1 1/2 cup zucchini, shredded (do not squeeze)
2 large eggs
3/4 cup sour cream (I use Yogurt, but I make my own from Whole Milk)
1 1/2 cup cheddar cheese, shredded
2 cups all-purpose flour
1 1/2 teaspoons baking powder
1/2 teaspoons baking soda
1/2 teaspoon salt
1. Mix the zucchini, eggs, sour
cream, and butter well before mixing in the
cheese.
2. Mix the flour, baking powder, baking soda and
salt.
3. Mix the dry ingredients into the wet ingredients
and pour the batter into a 6 XL muffins.
4. Bake in a preheated 350F oven until a
toothpick pushed into the center of the muffins comes clean.
Don’t drain your zucchini – the moisture is needed. The original recipe called for 1/4 melted butter as well – but I don’t add that and I think they are fine. We have talked about adding some chopped up bacon to them and switching cheeses…..you can do all kinds of experiments. This can also be a loaf of bread. So – the muffins are each 1/6 of a LOAF. They are jumbo.

The combinations of what you can match to papers and seasons is also endless. Right now you CAN stamp something fun and summery and make these, Lemon Blueberry, Strawberry…any kind of muffin! Then when autumn is here go with pumpkin, apple, cranberry. I make Panetonne at Christmas and I am thinking these are just the size to share. And you know – we have a paper for that! Any – all – I know your mind is coming up with some good matches now! Remember we even have an adorable BANANA stamp right now!
For this I used “Magic in This Night” paper. If you have not SEEN it – watch the video just to see every fabulous suite. Do NOT skip this suite because you don’t “do” Halloween. I used the Celebration Tidings bundle to create this fun tag. Using Blends I was able to transform my shimmery white cardstock to do a pretty good match with the paper.
